Yes! I said it! Gluten Free, Sugar Free, Chocolate Chip Banana Peanut Butter Muffins. More like delicious explosion of flavours in my mouth, lol. I didn't get this from my new book. I actually can't remember where I found it. Sorry!
Here is the recipe:
Gluten Free, Sugar Free, Chocolate Banana Peanut Butter Muffins:
3 over rippened bananas
2 eggs
1/2 cup sugar ( I used Splenda)
1/2 cup creamy peanut butter (I used chunky and it was awesome! Left little peanuts in the muffin)
1 3/4 cup of white rice flour
2 teaspoons of baking powder
1 teaspoon of baking soda
1/2 cup of butter or margarine (melted)
1/2 cup of buttermilk (I used skim milk)
1/2 cup of dark chocolate chips
Preheat the oven to 350 degrees.
Mix first 4 ingredients well.
Combine dry ingredients in a separate bowl and add to wet ingredients.
Mix well.
Add chocolate chips.
Fill muffin tins.
Bake for about 12 minutes or until muffins are firm to the touch. (I inserted a toothpick to determine if they were cooked and it ended up taking about 16 minutes).
