Filet of Sole


Heading to Brampton tomorrow for a funeral :( but then off to my uncle's cottage for the long weekend.
Should be a weekend full of temptation :P

Cleaning House!




First things first, what do you think of the new layout? lol It's my pattern! LOL

Anyways, so I just tied up my sixth garbage bag full of clothes to give away. A few months ago, I had come to the conclusion that I have way too much stuff-- clothes, craft supplies, books, etc. Clothes were the first thing to organize. I started with the things that I knew no longer fit then I looked at the clothes that I haven't worn in over a year. That was a clear indication that the only thing it was doing was occupying some room in my closet or drawers. I have also been trying to make some room for Joe. So far he has two whole drawers to himself and a 1/4 of the closet, lol. Another reason I am doing a major cleaning is that we are moving to a one bedroom apartment in October which means less room, and less packing if I just donate stuff instead, lol. The next thing I am going to tackle is my books. I have 3 huge tupperware bins filled with children's books. I would love to organize it in a way where I could find things more easily. Anyways, that's what my week is probably going to look like. We are heading down to Uncle Mil's cottage on Saturday! Yay! So excited for sunshine and the beach ;) Have a great week everyone!!!

Gluten Free, Sugar Free, Chocoloate Chip Banana Peanut Butter Muffins

Yes! I said it! Gluten Free, Sugar Free, Chocolate Chip Banana Peanut Butter Muffins. More like delicious explosion of flavours in my mouth, lol. I didn't get this from my new book. I actually can't remember where I found it. Sorry!

Here is the recipe:


Gluten Free, Sugar Free, Chocolate Banana Peanut Butter Muffins:

3 over rippened bananas
2 eggs
1/2 cup sugar ( I used Splenda)
1/2 cup creamy peanut butter (I used chunky and it was awesome! Left little peanuts in the muffin)
1 3/4 cup of white rice flour
2 teaspoons of baking powder
1 teaspoon of baking soda
1/2 cup of butter or margarine (melted)
1/2 cup of buttermilk (I used skim milk)
1/2 cup of dark chocolate chips

Preheat the oven to 350 degrees.
Mix first 4 ingredients well.
Combine dry ingredients in a separate bowl and add to wet ingredients.
Mix well.
Add chocolate chips.
Fill muffin tins.
Bake for about 12 minutes or until muffins are firm to the touch. (I inserted a toothpick to determine if they were cooked and it ended up taking about 16 minutes).

Free Shopping Is The Best Kind Of Shopping :)



I've been feeling kind of bored lately. The days consist of hanging out with my hunnie until he goes to work at 3:00pm, going to the gym, and not doing much all evening. Part of my problem is that I have nooooo money!
So today after the gym, I remembered I had some gift cards that I could use at Chapters. Yes! Free shopping is the best kind of shopping!


I ended up picking up "Chrysanthemum" by Kevin Henkes. A book for my Kindergarteners about the first day of school and "100 Best Gluten-Free Recipes" by Carol Fenster. Chapters had a bunch of books that contained lots of gluten free recipes, but after flipping through a few of them, I decided that this was the one I was going to buy. Reason #1: It does not contain a lot of weird ingredients that I will need to buy to make GF food. Reason #2: It has recipes for things that are challenging for people who do not eat gluten, for example, I can easily make GF stirfry without a recipe, it's pancakes and focaccia that are challenging. Reason #3: The book is full of recipes from all areas, from desserts, to salads, to breakfast and more.


 There are a couple of ingredients I will need to pick up in order to make some of the baked goods in this book, but that will need to wait until pay day :) I'll keep you all posted on my attempts.

220lbs Reward!

Recap on my reward system:

240lbs - New jeans!
230lbs - Pedicure
220lbs - LuluLemon sweater
210lbs - Bench sweater or jacket
200lbs - A ring with white gold and diamonds :)
180lbs - New swim suit (2 piece?)
160lbs - Trip! Europe or NYC. Depending on the finances, lol.
I know I haven't hit the 220lbs mark but I am very close! The rewards from 220lbs and lower have been sorta stressing me out, mostly because I made them nice and big... and expensive, lol. I really lucked out with this reward since it was a hand-me-down! (Whoo, hoo for hand-me-downs!) My friend Heather from work has also lost a significant amount of weight and this sweater no longer fits her so she gave it to me! I am so excited that I am able to reward myself without having to rob a bank :)

 


Shrinking Again!!

Hello everyone!
Went to T-Zone today and was measured and weighed. Since July 4th, (so just over 2 weeks) I have lost 6lbs, 1" on my waist, 1" on my abdomen, 1" on my hips... and 1/4" on my neck, lol. Not bad! I am trying to work out my finances to see if I can afford to keep going once I go back to work. I also have determined that I need to stop eating late at night. Joe comes home from work around 11:00pm and eats his dinner. Then we are up until 3 or 4 in the morning and I tend to get hungry and snack. Although they are healthy snacks, I think I need to stop eating that late. Last night I curbed my hunger with lots of water and was able to drop 2lbs. So, that must be why I was plateauing a little bit.
Checked my BMI and I have dropped from a 44 to a 35 :) Still "obese"  but not "extremely obese" lol.
