SNOW DAY!

SNOW DAY!!!!!!

I got to stay home today with my 2 favourite guys!
I was worried I wouldn't stay on track since usually being home is self-sabotage but I did extremely well :-) Here is my meal plan today:

Breakfast:
Kashi (1 cup)
Almond milk (1 cup)
Cinnamon
Banana

Lunch:
Left overs from last night's dinner (rice pasta, asparagus,  chicken and a salad)

Snack:
Apple
Banana
Peanut butter
Cinnamon
Oat/banana biscuit

Dinner:
Quiche with ricotta,  eggs and veggies
Salad with Greek dressing

Getting a little hungry now but I'm going to try and down a big glass of water and head to bed. Goodnight world! :-)

Down 5lbs in 4 days!

Hi everyone! Hope you all had a great week! I am feeling great today because I am down another pound since Monday. That's 5 lbs in 4 days! Here is what I ate today:

Breakfast:
Kashi GoLean (1 cup)
Skim milk (1 cup)
Apple

Lunch:
@ Pita Pit!
Chicken Souvlaki Pita with lots of veggies and light mayo

Snack:
Yogurt
Strawberries

Dinner
California roll (9 pc)
and...
a yummy and filling salad :)

After work today I went to the gym and then grocery shopping and bought a lot of veggies. I even bought a few new things to use this week:
Butternut squash to make a soup
Avocado, cucumber, crab, roasted seaweed and sushi rice... to make sushi lol
Lots of green peppers to make stuffed peppers later this week (keep ya posted)

Day 4 and Still Going Strong...

Good evening, everyone!
Another successful day :) Here is what I ate today:

Breakfast:
Kashi GoLean (1 cup)
Skim milk (1 cup)
forgot to grab a fruit :(

Lunch:
Left over cabbage, rice noodles and shrimp from yesterday

Snack:
Yogurt
Strawberries

Dinner:
A huge and delicious salad! Chicken breast, lettuce, Craisins, almonds, sunflower seeds, olives, dressing

Trust me, that's a huge serving bowl and I ate the whoooooole thiiiiiing, lol

Working My ASS Off!

Hurray for another successful day and down another pound this morning! Today I ate well, went to the gym and made another healthy concoction, lol. Here is my plan for the day:

Breakfast:
Kashi GoLean (1 cup)
Skim milk (1 cup)
Banana

Lunch:
Lentil concoction from yesterday
Salad (same as yesterdays)

Snack:
Yogurt
Strawberries

Dinner:
1/2 cup rice noodle
Shrimp
Cabbage, spinach, baby bok choy, onions, garlic

Delish!

So I bought my first cabbage a few weeks ago and I am in love. They are super cheap and I spread out one cabbage to work for three different meals! So versatile and yummy :) Did the same routine at the gym today although Joe`s mom wasn`t able to join me. Anyways, until next time! (...probably tomorrow :))

I Feel Amazing!

I feel amazing today! Day 2 of my born-again lifestyle, lol. Checked the scale today, (because I am a scale-whore) and I'm down 3 lbs! Today was another successful day. Ate some delicious, healthy and filling food and actually excited for the gym tomorrow! (I know, who is this girl? lol).

Breakfast:
1 cup of Kashi GoLean
1  cup of skim milk
1 banana

Lunch:
Chicken breast
Broccoli
1/2 cup of brown rice
Low sodium soy sauce
2 Fat Free Kraft Singles

Snack:
Yogurt
Strawberries
Gluten Free Banana Muffin
This was my dinner tonight. A concoction of onions, garlic, salt, pepper, cabbage, broccoli, brown rice, ground chicken, peas, lentils and tomato sauce. Delish! *muah!*



Decided to have a nice salad at "dessert". Dr. Som, (who I should really make an appointment with) would be so proud). Lettuce greens, fat free-sugar free-calorie-free dressing, sunflower seeds, almonds and Craisins. Mmmm...



Day 3 tomorrow! Wish me luck! Joe's mom will be joining me at the gym tomorrow. Should be fun :)

Recent Dinners

So the last few evenings have been so chilly out and it's making me get into the "autumn spirit". I know, way too early to be thinking fall but it is my favourite season :) With cooler weather also brings my desire to cook dinner! lol Here is what I made Tuesday night:

1/2 cup of cereal pasta with 1 tbsp of light salmon cream cheese
1 filet of sole
Asparagus with a tbsp of light ricotta cheese

Chicken breast (deck of cards size)
1/2 cup of quinoa with low sodium soy sauce
Asian style frozen veggies
Also, notice the glass of Peach Mango V8? Started taking my Inositol again today :)
(I've been really slacking on taking my supplements, partly because  I started running out and didn't have any money to buy new ones and partly because I\ve been waking up at noon for 2 months and missed a bunch of my morning ones, lol. Hopefully I\ll get back on track in September!)

Great Day!

I had a great day today :) I got a new part time job and I am getting a sweet cheque from my apartment rental company. Not bad!

Here is what I ate today:

Breakfast:
Banana (on my way to my interview)

Lunch:
Grapes
2 slices of gluten free bread
Sundried Tomato Copanada (From Fiddleheads. All organic but probably full of fat. They had a free sample and I was hooked so I decided to treat myself, lol)


Dinner:
Salmon portion
1/2 cup of cereal pasta with light Salmon Cream Cheese (delish!)
Brocolli with one Fat Free Kraft Single

Back On Track...

So I am back on track this week and proud of it! Lost 3 of the 5 lbs I gained this weekend, (lol) and headed back to T-Zone today. Also made a supper yummy and healthy dinner :)

My Weekend :)

Hello everyone! Hope you all had a great weekend. On Saturday, Joe and I took Russell to the beach and had a great time. Russell is a horrible swimmer by the way ;) lol. On Saturday night, I decided that we had things to make a great breakfast Sunday morning so I went on the hunt to find a gluten free pancake recipe.
It said that you need to make it the night before, so I went to the kitchen and whipped it up in about 3 minutes :) Then I thought of something creative and possibly delicious ;) I've been craving funnel cakes for the last couple of weeks-- wouldn't it be cool if I could make a gluten free funnel cake?!?! I took some pancake batter and went to work. I bought Breyer's Fat Free Vanilla Ice Cream, made a berry sauce and came up with this:


Not bad if I must say so myself!!! I used the batter the next day to make pancakes-- Verdict: They were okay. Not as fluffy as a pancake, more like a crepe.
Since being off work I have noticed that I have been eating a lot more :( When I was at work I would eat breakfast around 8:00am, lunch around noon, maybe a snack when I got home from work around 4:00pm, dinner around 6:00pm and maybe a light snack at night time. Now, I can eat whenever the hell I want!!! Mwah-hahahahaha! ;) Although I am eating healthy snacks, I think I am consuming too many calories. I haven't gained any weight (thank god!) but I haven't lost any either :( I told myself that starting today I was getting back on track. Here is my menu for today:

Breakfast:
Kashi Go Lean (1 cup)
Skim milk (1 cup)
Banana

Snack:
Banana
Peanut Butter (1 tbsp)

Dinner:
Lean beef meatballs (4)
Quinoa (1/2 cup)
Mushrooms, onions and peppers

Some New Finds!

On my way to T-Zone today (day 5 by the way), I decided to stop by Fiddleheads. Joe and I are going to have a picnic at the beach tomorrow so I decided it would be a great opportunity to finally try their gluten free bread. I decided to choose this one. I am making homemade hummus, homemade baba ghanoush, and bruschetta so far.

I was going to pick up some of Mary's Cookies but as I was looking at the side of the box I noticed that they had 9g of sugar and quite a bit of fat. I decided instead to try these cookies. They have 2g of sugar and 1g of fat for two cookies!

Another find: Lentil chips?! Yes, lentil chips. Gluten free and baked!




Taste Test:

Taste Test 1: Organic Kamut N` Flax Bread:
Verdict: Delish!!!
Ate a slice with a tiny bit of margatine. Very similar to regular bread! Tastier than some of the Dempster`s brands I`ve tried. Has 2g of fibre per slice (not ideal but not bad). The downside is... a loaf (which is pretty small) is $5.99 a bag. Let`s just say I threw that loaf in the freezer and will use it very sparingly lol.

Taste Test 2: Quinoa Chocolate Chip Cookies
Verdict: Scrumptious!
Poured myself a small glass of skim milk and tried one small cookie. The chocolate chips has melted a little since I left them in the car while I was at T-Zone but that didn`t matter. They were very tasty. Similar to Mary`s Organic Cookies but without the aftertaste. Again, they have 2g of sugar and 1g of fat for two cookies! And again, the downfall being that a bag of the cookies cost $6.59 (ouch!)

Taste Test 3: Baked Lentil Chips
Verdict: Yummay!
Tried these chips with a bit of hummus and they were delish. Very similar to the Humbles Chips (hummus chips) I often buy.

Anyways, off to make some food for our picnic tomorrow :) I`ll post pics soon!
